Grilled Dove

Yields 1 Serving

Ingredients:
6 dove breasts
(Use 10 – 12 dove breasts for 2 Servings)
1/2 cup Italian dressing
1/2 cup red wine
1/4 cup beer
Salt (to taste)
Pepper (to taste)
Seasoned salt (to taste)
Red pepper (to taste)
1 tablespoon olive oil (if using frying pan)
1 tablespoon butter (if using frying pan)

Directions:
In a large bowl, pour the Italian dressing and red wine over the dove breasts.  Add the beer.  Season the dove breasts with the salt, pepper, seasoned salt, and red pepper to taste.  Cover the bowl and refrigerate, marinating the mixture for 4 – 5 hours.  Remove the dove breasts and reserve the marinade.  Over a medium heat, grill the dove breasts until they are golden.  Or, coat a frying pan with the olive oil and butter.  Then, in the frying pan, cook the dove breasts for about 8 – 10 minutes, turning them often or until the center is light pink.  In a large saucepan, bring the marinade to a boil.  Add the grilled dove breasts, reduce the heat, and simmer the mixture for 15 minutes or until desired doneness.
